Baratto Wines
Baratto Wines is a family owned and operated vineyard and winery. We, Peter and Karen, grow the grapes, make the wine, package onsite and offer tastings from our cellar door which is also located on the vineyard.
In other words, we do it all!
Why? Because it is OUR family name on the label!
We nurture and care for our wines as though they were our children! From vineyard to your table, every step is important to us, just as it was for Peter’s father and mother before us.
We believe the key to “minimal intervention winemaking” starts in the vineyard.
Our vines are nurtured and maintained without the use of pesticides. They are hand pruned and irrigated only to relieve grape stress. All of this ensures a more concentrated and flavorsome fruit. Grapes are harvested when they “taste right”, meaning the berry is at its peak in flavor with a balance of sweetness and acid. Observation is very important for this method of farming.
Just as in the vineyard, the winemaking process is kept as direct and uncomplicated as possible. We prefer to harvest in the early hours of the morning when the grapes are cool and they are all crushed at our winery located alongside the vines. The grape musk and juice is kept at a consistent temperature using refrigeration and the ferments need to be regularly checked day and night.
Once made, our wines are packaged on site. In preparing for this, Peter sometimes comments ‘this is where we can stuff it up’. As we don’t use sterilents or yeast inhibitors and only minimal sulphur dioxide (220) there is no room for error and a high standard of quality control must be maintained otherwise all the hard work up to this point could be for nothing.
Lastly, we welcome you to our cellar door, come and taste our range of wines while chatting with the winemaker (Peter) or relax with a glass on the decking while enjoying the views of the vineyard and scenic hill.
Enjoy …….. from our family to you.
220 Sulphur Dioxide the average amount contained in our wines is 80 to 90 parts per million total.
Allowable limits are up to 250ppm for dry wine and 120ppm for organic wines.
We choose not to use sterilants and yeast inhibitors and believe this maybe why so many of our customers comment after enjoying a couple of glasses of our wine they don’t have that dreaded headache the next morning.
"Exceptional wine. I have suffered from allergies after drinking red and white wines. I enjoyed a few glasses of the Cabernet Sauvignon/Merlot (15L Cask) and felt amazing, no reaction and smooth to drink. Very "morish" with NO hangover” Maria (Sydney)
